Also known as 红石斑 (Hong Shi Ban), Merah Kerabu, Ang Gau, Red Garoupa
One of the four king fish in Singapore, it is popular among all ages and even more so during the Chinese New Year celebrations due to its auspicious red colour and due to how excellent it is for steaming due to its firm and bouncy meat. Meat is deboned and descaled.
Our red groupers have two variants, a golden one or a red one, both are wild-caught in Indonesian waters and have the same price.
For a more affordable option, Emperor Red Snapper would be our top recommendation for steaming.
Price ranges from $55-80/kg but can reach up to $100/kg during festive seasons.
