Popular fish that is used for steamboats or Cantonese-styled steamed fish for home cooking, as well as Assam fish.

Selecting fillet and debone means that we will fillet and portion the fish, *debone, and pack them individually. The fish head will be cut in half.

Selecting half fillet and half steak cut means that we will fillet the upper part of the fish and steak cut the tail area. The fish head will be cut in half.

Selecting steak cut means that we will chop the fish into appropriate size steak slices. The fish head will be cut in half.

The most popular option is filleting, as the bones can be used for fish soup.

If you have other specifications for cutting, please leave a remark during checkout! (e.g. fish head cut into small pieces, fillet tail instead of the upper part)
