Extremely popular for curry, assam fish, steamed, meat is less tender compared to other snappers. The fish head is most commonly found in fish head curry restaurants.
Their texture is excellent when cooked in a curry, being able to hold its shape but quickly absorbing the curry when lifted from the bones.
Customers usually steam/fry it/cook curry with it.
Great value for money, tail is 'less valuable' than fillets simply because demand is not as high compared to fillets that are softer and boneless, but for experienced chefs, tails are very worth the purchase!
